    This sparkling pomegranate mocktail is not only delicious and easy to make, but also provides antioxidants and sources of fiber. A fruity mocktail recipe with nourishing ingredients too? That's right!

    POM Wonderful Orange Blossom White Tea with POM Wonderful 100% Pomegranate Juice and fuyu persimmon make this the perfect festive mocktail for the holidays.

    ingredients

    Pomegranate Ice Cubes (optional)

    ½ cup POM Wonderful Pomegranate Fresh Arils

    water

    Persimmon Purée (yields 1 ½ cups of purée, enough for 6 drinks)

    2 fuyu persimmon, peeled, deseeded, and cut into wedges

    ½ cup water

    Drink Mix

    Ice to fill your glass or cocktail shaker

    4 tablespoons persimmon purée

    4 teaspoons lime juice

    6 ounces POM Wonderful Orange Blossom White Tea

    2 ounces POM Wonderful 100% Pomegranate Juice

    2 ounces sparkling water

    instructions

    To make the Fuyu Persimmon Purée:

    1. Add the prepared fuyu persimmon wedges and water into a blender. Blend until smooth and set aside.

    Note: extra persimmon puree can be stored in a covered container and frozen for later use (or you can freeze small portions in ice cube trays).

    To make the drink:

    1. Option 1: Fill ¾ of a cocktail shaker with ice. Add persimmon purée, lime juice, and POM Wonderful Orange Blossom White Tea. Cover, shake vigorously for 15 seconds, and strain into a stemmed glass. Top with POM Wonderful 100% Pomegranate Juice and sparkling water.
    1. Option 2: Fill a stemless wine glass with pomegranate ice cubes (or regular ice). Add the persimmon purée, lime juice, and POM Wonderful Orange Blossom White Tea. Stir, then top with POM Wonderful 100% Pomegranate Juice and sparkling water.
